Bevy is not just a name but a manifestation of the word's meaning. Defined as both group or a gathering, and being Liverpool slang for having a drink and “knocking one back.”
Bevy is first and foremost a neighborhood bar. This means, Bevy's vibe reflects the surrounding community and service is the top priority. Like vibrant and dynamic Kakaako, Bevy takes a modern approach to food, beverage, music and art while looking to the past for time tested inspiration and technique. inspired by European style cocktail bars, with a vintage Industrial feel using sustainable decor and products. The focus is on food and drinks made with a farm to bar approach, utilizing the best local and sustainable produce to make amazing drinks, and craveable food, we plan on leaving as small an ecological footprint as possible.
Bevy is the idea of owner Christian Self; his "reverse restaurant" approach is a new take on the bar experience. Inspired by the era of 1920s and 30s prohibition and the speakeasy, Self is creating a cocktail focused bar with new and old techniques. Bevy will thrive with the essential components of drink, food and overall ambiance. A well rounded selection of his award winning & publicized cocktails will be featured, as well as molecular techniques to create unique cocktails that have not been seen in Honolulu using a unique ice program which will exceed customers’ expectations. A specialized selection of wine, beer and non-alcoholic drinks will also be available. Self also will be teaming up with co-owner Timo Lee who oversees the marketing, entertainment and music programming as well as overall ambience and artistic elements of Bevy. For the kitchen, fresh tapas and food menu with Spanish influences and unique twists. Flavor profiles incorporate tastes from the Mediterranean and around the globe from small craveable plates to entrée size portions suitable for sharing, using fresh, local and organic produce that complements and pairs well with the cocktail program.
